Best Breakfast - or Lunch Brunch or Dinner

This fantastic (not to mention easy) meal is great for breakfast, company brunch, or dinner.

You’ll need a large cake pan for this recipe.

Open a bag of hash browns and dump them in the pan.(alternatively you can shred your own potatoes, if you have a food processor and the time, or you can cut up baked potatoes into chunks if you’re short on time!) Drizzle a small amount of olive oil over the potatoes and mix so that the pan is lightly greased. If you’re using raw potatoes, cook for 15 minutes or so first.

Top with a onions and peppers.

Cut a brick of Neese’s sausage into small chunks (I usually split the brick into half on the short side, then turn it and cut three or four lines down the length of it). Alternatively, you could use hamburger, or cooked turkey or chicken. I even tried it with canned salmon once, it was delicious!

Break as many eggs as you need into a bowl and mix lightly. We usually use 8 eggs (2 per peson). Pour over the top and lightly stir.

If your family can eat cheese, you can shred some over the top. You also could top with tomato slices for an interesting treat!

Season to taste - you could use cumin, curry, hot pepper, parsley, basil… whatever your family likes. I usually use a dash of cumin and fresh parsley from the garden.

Pop the pan into the oven at 350 degrees for 30 minutes, or until the hash browns are lightly browned. The eggs should be thoroughly set as well.

Serve with lots of catsup (we use heinz brand only… it’s gluten-free!) and sweet tea or coffee.
