Desperation Turkey Soup
I made this soup as a “desperation dinner” - we didn’t have much food in the house AND I didn’t feel up to cooking much.
The night before, while cooking our dinner, I took a package of turkey parts out of the fridge. I had the two legs and wings from Christmas dinner, which made for a VERY meaty soup. I could have just used saved bones. I popped them into a big pot of boiling water with some onion peel and a few fresh sage leaves. Let it cook for about two hours to make a nice broth and soften the meat from the bones. I popped it into the fridge for the night.
Early in the next afternoon, I de-boned the meat, added more water, and popped it back on the stove. Added two cans of black-eye peas, some onion and pepper, and a couple of chopped up carrots.
And then I just let it cook… I could have tossed it in the crockpot if I’d thought of it.
Toward the end of cooking I added some celery salt, curry, and cumin. I almost always let people salt at the table instead of adding it while cooking; it did need a little salt.
Ken pronounced this soup to be “rockin” and demanded that I make it again!
